We grabbed a bag of Kale mixed with radicchio and carrots from Whole Foods and then added:
a little bit of goat cheese
and some roasted zucchini and beets (Turn your oven up to 450 degrees and drizzle some olive oil over the veggies - roasting should take about 20 mins)
We also added a hard boiled egg and avocado. If you are making a big batch of salad for the next couple of days like we did, we usually leave out the egg and avo so they don't get bad, and just add them fresh the next time we're eating the salad.
Also while at Whole Foods we picked up a new salad dressing from Organic Girl. We are in love with their Lemon Agave salad dressing. It's super light and brings a lot of flavor to this salad.
